Potable water at more than 3000 bar passes through a nozzle of diameter between 0.1 and 0.2 mm (0.004" to 0.008"). Given that it is a jet, cuts can be straight or curved.
Water goes through the pastry at a speed 2.5 sound speed. The resulting jet cleanly cuts the product, both fresh or frozen, respecting the cold chain. Does the product get wet? The remaining water path is lower than cutting with a wet knife.
The machines work with a water pump that includes a hydraulic pressure intensifier, like the ones used for steel, plastic, glass or marble. The main difference is that an abrasive is required to cut such materials.

The product is placed on a 60 x 40 cm (24” x 16”) tray that goes inside the machine (other dimensions available). It can be used the area you want.
The patented mechanics are based in a jet that goes through the product and goes directly to the drain placed beneath the tray. The water strength takes out air and humid air. Besides, in order to avoid the bottom layer getting wet, the tray is made by sharpened blades that hold the product and send the water to the drain. We have 2 main tray designs with different distance between blades.
Our software Watercut Creator includes the most common standard regular (rectangles, circles, flags…) and assembled shapes (hearts, trees, bells…). You choose the size or amount of pieces.
It’s also possible to use images, logotypes, write texts and edit them to combine them in any size and shape and repeat them in any pattern. There’s no limit.
The product variety that can be cut is bigger than any other cutting technology, specially if we take into account that waterjet cutting is suitable to cut products at -20 °C: cakes, millefeuille, chocolate, mousses…
